Tomato and Feta Quiche with a Cherry Tomato and Avo Salad

Our Tomato and feta quiche, matched with a crisp, fresh cherry tomato and avocado salad is just the trick for a light summer lunch, and one of our favourite meals to serve during your luxury South African safari.


Here's how you too can make this culinary magic happen at home:

Tomato and Feta Quiche

Pastry Ingredients

  • 3 cups flour
  • 500g butter
  • ¼ tsp salt
  • pinch of pepper


Method

Sieve the flour, salt and pepper into a bowl and work in the butter. Whisk the eggs and add them to the flour, mixing to form a soft dough. Grease and line a suitable tart tin with the dough.

Filling

For the filling, simply blend the following ingredients together, saving some cheese and tomato to garnish the top:

  • 300g fresh cherry tomatoes, chopped
  • 1 litre of cream
  • 1 tsp vegetable stock powder
  • 250g Soft Greek feta cheese
  • Sprinkle of dried parsley
  • 2 eggs, beaten

Pour this mixture into the dough-lined tart case, top with the reserved cheese and tomato, and bake for 25 to 30 minutes at 150° C.


Cherry Tomato Salad

Meanwhile, prepare your salad by combining the following ingredients

  • 300g red cherry tomatoes, halved
  • 300g yellow cherry tomatoes, halved
  • 2 red onions, sliced
  • 1 cucumber, sliced
  • Parsley to garnish
  • Spring onions
  • 1 Avocado, diced (or a handful of pumpkin seeds)

A dressing can make or break a salad, avoid disappointment by matching your latest masterpiece with our delicious honey and lemon creation.

Dressing

Mix the following together-

  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon plus 2 teaspoons fresh lemon juice
  • Salt & Pepper to taste
You can pour the dressing over the chilled salad in advance or serve it separately. Enjoy with the quiche, served warm or cold, for a delicious healthy meal any time of the day.

Although once thought to be poisonous, tomatoes are a great source of vitamin C, biotin, molybdenum and vitamin K which are fantastic for lifting your immune system to the next level. They are also filled with all sorts of wonderful minerals such as copper, potassium, manganese and phosphorous. Tomatoes may be instrumental in preventing cancer and lifting depression, while they also contribute to a healthy heart, skin and digestive system.
